Gajar Halwa
A classic North Indian dessert made from grated carrots slow-cooked with milk and sugar.

- 1 kg Carrots (Gajar), peeled and grated
- 1 liter Full-fat Milk
- 1 cup Sugar (adjust to taste)
- 4 tbsp Ghee (Clarified Butter)
- 1/2 tsp Cardamom powder
- Handful of Cashews and Raisins
- 2 tbsp Khoya (optional, for richness)
Step-by-Step Cooking Instructions 👨🍳:
- Sauté: Heat 1 tbsp ghee in a heavy-bottomed pan. Add the grated carrots and sauté for 5 minutes until they soften slightly.
- Cook with Milk: Pour in the milk and bring to a boil. Simmer on medium heat, stirring occasionally, until the milk evaporates completely.
- Sweeten: Add sugar and the remaining ghee. The halwa will turn liquidy again as the sugar melts.
- Thicken: Continue cooking and stirring until the mixture thickens and starts leaving the sides of the pan.
- Flavor: Stir in the cardamom powder, nuts, and raisins. If using khoya, crumble it in now for extra creaminess.
- Serve hot or warm, perfect for winter evenings!
