Home-cooked Aloo Gobhi

Ingredients You'll Need 🛒:

  • 2 medium Potatoes (Aloo), peeled and cubed
  • 1 medium Cauliflower (Gobhi), cut into florets
  • 1 large Onion, finely sliced
  • 1 tsp Cumin seeds (Jeera)
  • 1 tbsp Ginger-Garlic paste
  • Spices: Salt, Turmeric, Red Chili Powder, Amchur
  • 2 Green chilies, slit
  • Fresh Cilantro for garnish

Step-by-Step Cooking Instructions 👨‍🍳:

  1. Heat oil in a pan and add cumin seeds. When they splutter, add the sliced onions and sauté until golden brown.
  2. Add the ginger-garlic paste and green chilies. Sauté for a minute until fragrant.
  3. Add the cauliflower florets and potato cubes. Toss well to coat them in the aromatics.
  4. Stir in salt, turmeric, and red chili powder. Cover the pan and cook on low heat for 15-20 minutes.
  5. Stir occasionally to prevent sticking. If needed, sprinkle a few drops of water, but keep it mostly dry.
  6. Once the vegetables are tender, add Amchur (mango powder) for a tangy finish.
  7. Garnish generously with fresh cilantro and serve hot with Phulkas or Parathas.
