Aloo Gobhi
A classic, comforting dry dish made with spiced potatoes and cauliflower florets.

Ingredients You'll Need 🛒:
- 2 medium Potatoes (Aloo), peeled and cubed
- 1 medium Cauliflower (Gobhi), cut into florets
- 1 large Onion, finely sliced
- 1 tsp Cumin seeds (Jeera)
- 1 tbsp Ginger-Garlic paste
- Spices: Salt, Turmeric, Red Chili Powder, Amchur
- 2 Green chilies, slit
- Fresh Cilantro for garnish
Step-by-Step Cooking Instructions 👨🍳:
- Heat oil in a pan and add cumin seeds. When they splutter, add the sliced onions and sauté until golden brown.
- Add the ginger-garlic paste and green chilies. Sauté for a minute until fragrant.
- Add the cauliflower florets and potato cubes. Toss well to coat them in the aromatics.
- Stir in salt, turmeric, and red chili powder. Cover the pan and cook on low heat for 15-20 minutes.
- Stir occasionally to prevent sticking. If needed, sprinkle a few drops of water, but keep it mostly dry.
- Once the vegetables are tender, add Amchur (mango powder) for a tangy finish.
- Garnish generously with fresh cilantro and serve hot with Phulkas or Parathas.
