Chole Bhature
Spicy chickpeas served with fluffy, deep-fried leavened breadβa North Indian classic.

Ingredients You'll Need for Chole Sabzi π:
- 2 cups Chickpeas (Chole), soaked overnight
- 2 large Onions, pureed
- 2 tbsp Chole Masala powder
- 1 tbsp Ginger-Garlic paste
- Amchur (Dried Mango Powder) for tanginess
- Tea bag (optional, for dark color)
Ingredients You'll Need for Bhature π:
- 2 cups Maida (All-purpose flour)
- 1/2 cup Yogurt (Dahi)
- 1/2 tsp Baking soda
- Oil for deep frying
Step-by-Step Cooking Instructions π¨βπ³:
- Pressure cook the soaked chickpeas with salt and a tea bag until tender.
- For the Bhature dough: Mix maida, yogurt, and baking soda. Knead into a soft dough and let it rest for 2 hours.
- In a large pan, sautΓ© ginger-garlic paste and onion puree until light brown.
- Add tomato puree and chole masala. Cook until the oil separates from the masala.
- Add the boiled chickpeas (remove the tea bag first) and simmer for 15 minutes on low heat.
- Roll out small portions of the dough into ovals and deep fry in hot oil until they puff up.
- Serve the hot Bhature with the spicy Chole, sliced onions, and a lemon wedge.
